A VERY Tasty Chili Recipe

I can follow just about any recipe, but last night I decided to get a little creative...since you can't really screw up chili.  I looked at The Peanut Butter Runner "Dad's Chili" recipe and the Pioneer Woman "Chili Frito Pie" recipe and took a little from both...and I must say it turned out pretty well so I'm sharing the recipe.  I also made Jiffy cornbread from the box but added a cup of shredded cheddar cheese and 4 table spoons of diced jalapenos and it was mighty tasty!



3 cloves garlic minced
1 large onion
1 1/2 lbs lean ground beef
1 can (12 To 14 Ounce) Tomato Sauce
1 can (10 Ounce) Ro-tel (diced Tomatoes And Chilies)
1/2 cup Warm Water
2 - 4 tbsp chili powder (to taste...I used 2.5)
1 tsp salt
1 tbsp cumin
1 teaspoon Ground Oregano
16 oz kidney beans Drained And Rinsed
16 oz Pinto beans Drained And Rinsed

1. Brown meat and onions. Drain well and wipe out pan.
2. Add all ingredients and simmer, covered, for 1 hour.
3. Serve with your choice of chili condiments I like hot sauce, sour cream, cheddar cheese and oyster crackers.

Anthropologie Items of the Week

Its getting to be that time of year where the weather out for shirt dresses with tights and boots.  These are my picks from Anthropologie's new arrivals!


Technically this one is a tunic...so it might need to be worn over skinny jeans instead of tights or leggings.


I know this one doesn't really look like any thing to special but I think the cut will be to die for if you try it on and styled right it could really be a hot little number!

Pumpkin Bread Pudding

Y'all know how much I love fall flavors and bread pudding so this sounds like a perfect combo to me...I'll make it for whoever invites me over to dinner first!


Pumpkin Bread Pudding


1 1/2 cups whole milk (Or 1 cup heavy cream plus 1/2 cup whole milk)
3/4 cup canned solid-pack pumpkin
1/2 cup sugar
2 large eggs plus 1 yolk
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/8 teaspoon ground allspice
Pinch of ground cloves
2 tablespoons bourbon (optional)
5 cups cubed (1-inch) day-old baguette or crusty bread
3/4 stick unsalted butter, melted

1. Preheat oven to 350°F with rack in middle.
2. Whisk together pumpkin, cream, milk, sugar, eggs, yolk, salt, spices and bourbon, if using, in a bowl.
3. Toss bread cubes with butter in another bowl, then add pumpkin mixture and toss to coat. Transfer to an ungreased 8-inch square baking dish and bake until custard is set, 25 to 30 minutes.

So Fresh and So Clean Clean

I haven't done a Fab Find Friday in a while and since I'm going to be in Oxford for the Georgia/Ole Miss game tomorrow I figured I'd go ahead and post thing one today.

I like to think of myself as an expert packer but I almost always forget one critical thing.  When I went to Knoxville to help move Katrina into her new house I forgot my face wash and used some of hers.  It was the Philosophy On a Clear Day Foaming Soap and I immediately fell in love with the product.  It is pretty much non-scented, not drying at all and keeps my face totally clear.  I'm since bought my own face wash and the oil free moisturizer and I must admit I'm totally hooked!


I've also been considering getting a Clarisonic Mia...does anyone else use one?  If so what do you think about it.  I hear they are great for gently exfoliating and leave your skin looking so fresh and so clean clean.

I love this neck line and the length of the shirt...but it looks like it could be pretty tight in the mid section.


 This one could also be tight in the mid section but for some reason its still very intriguing to me.


This isn't a new arrival, but I saw a girl in my neighborhood wearing it with a black pencil skirt and now I want it!

The Longest Post Ever about Ranch and Salad.

I've had several wonderful weekends spend with friends over the past several weeks and while I love me some quality friend time I don't so much love the way I feel following these weekends as a result of all the bad things I eat.  Don't get me wrong, I am all about indulging in good food...but I seem to always overindulge in foods that are very bad for me.

This past Sunday I decided it was time to get serious eating healthy so I went to the store and got stuff to make my favorite salad.  I never get tired of this salad AND I never pass up this salad even when I'm starving because it is completely satisfying every time.

Part of this was spurred by my discovery of Hidden Valley Seasoning and Salad Dressing Mix.  You see, I've long been in search of the perfect store bought ranch dressing.  It's always so good at restaurants (garlicky, flavorful and a little runnier than what comes in the bottles at the store) but despite buying literally every brand of ranch at some point I've always ended up disappointed. 

So imagine my surprise this weekend when I tasted the perfect ranch dressing at my friend Lindsey's house.  I immediately asked her what brand it was and when she said she made it my jaw dropped...I've been making my own salad dressings for a long time but never knew you could make your own ranch!  She  quickly clarified and said she'd used this seasoning mix.
I went in search of it at Kroger and soon as I got back but all I was able to find was the seasoning packets (they'll do, but if anyone comes across the canister please let me know where you found it).

The flavor is great, but here's what I like most about it...you can make it healthier (to a certain extent) and it still tastes good.  The recipe calls for seasoning, one cup of milk and one cup of mayo.  You can use skim milk, 2% or whatever else you have on hand.  You can use fat free mayo, miracle whip or my personal fav the mayo made with olive oil.  Since I'm not usually a mayo eater I didn't have much on hand...which lead me to the realization you don't even have to follow the recipe exactly.  I just used about half a cup of mayo then left the dressing in the fridge to thicken up a bit and it did.  Of course if you like your ranch a little thicker you can used a full cup of mayo when you make yours!

I feel kind of depressed that this started out as a post about eating healthy and it turned into a rant about ranch which isn't exactly healthy...but I've got to think making your own is a little bit better for you.  I'd also like to clarify that I'm not one of those people who puts ranch on everything and I use a very, very, very tiny bit of dressing when I put it on my salads...barely enough to give it the thinnest of thin coats.

Before I get off the subject of ranch I'd also like to point out that this seasoning mix could be used for a whole host of things...taco soup, mixed with sour cream for veggie dip, sprinkled over roasted potatoes...you get the picture right?

So now, back to my salad.  Here's what I've been eating all week:
  • Start with a bed of mixed greens
  • Cut some grape tomatoes in half and put them on the salad
  • Next cut bell peppers into thin strips about the size of match sticks and add them to the salad
  • Open a can of corn and a can of black beans and throw a spoon full of each on the salad
  • Add some protein to the salad...I use the pre-cooked chicken strips you get in the deli section at the store in the southwestern flavor and I shred it up a little bit on the salad
  • Sprinkle a little cheese on (I use cheddar made with reduced fat milk)
  • Finally when you're ready to dig in add a little salad dressing.  Obviously I use a tiny bit of ranch, but you can use whatever tickels your fancy!
So there you have it.  I know it might not be the most health salad ever, but like I said, I never get sick of it and I never need anything else to feel full.  I think it incorporates most of the food groups so I feel relatively good about it.

This might be my longest post ever and its on such a lame subject.  Fail.  And sorry, it was too long to proof so I'm sure there are tons of typos...whoops.

A New to Me Wine Rack

I saw these pictures on some blog this morning and I immediately wanted one...



After doing a little Internet research I discovered that they are actually probably vintage milk carriers, but I love the idea of using them for counter top wine storage...its hard to find a cute wine rack that isn't too cheesy.



Both of the examples above are from Etsy, but I'm not telling which store to get them at in case I end up buying one for my self...I know, its so selfish of me, but this is my blog!

Olivia Who?

Sorry...I should have clarified who Olivia Palermo is since she really isn't a well know celeb.  She was on the City and she was a total witch to Whitney Port and everyone else on the show...that is how she's "famous."  I think she just comes from a very wealthy New York family and that is how she pays for all her fab clothes.  I'm pretty sure her BF is a male model and he's pretty dreamy.

Here are a few more examples of her typical style...very chic and put together looking but always just a tiny bit edgy!


Mason Jar Chili



What's not to love about this?  Mason jar? Check.  The perfect fall combo?  Check.

Basically all you do is make chili and spoon it in a mason jar.  Then mix up some cornbread and spoon it on top of the chili. 

Create as many servings as you need and place mason jars on a cookie sheet so its easy to get the jars in and out of the oven.

Bake for 25 minutes or until cornbread is golden!

New Design Inspiration



I am in love with this bathroom.  I die for the HUGE tub just floating in the middle of the room.  The dark floors and ceiling beams are killer and I'm pretty sure those are outdoor showers out back! 


I love some parts of this room, but not all of it...the walls are way too stark white and I strongly dislike the choice of lamps and night stands.  I do like the natural colored, tufted upholstered bed with light linens, the painting over the bed and the curtains!


Once again some things I love, some things I don't.  The island and stools are way to modern for my tastes...and this room is also very bright white.  I do like that little window nook, the glass cabinets to show off crystal (in my case it would show off my champ glass collection) and the framed print resting on the counter top below the glass...I can hardly see the print so it's not so much that that I like, but rather just the idea of prints resting on the counter leaning up against the back splash.

I Love Olivia?

As much as I hate to say it, it think its time to admit that I kind of love Olivia Palermo's style.


1. White/cream blouses are so classic.

2. I love her rust colored leather shorts.

3. Its a perfect example of how to wear animal prints with out looking like you should be standing on a street corner.

4. I love that she's going against most of Hollywood and rocking a shoulder length hair cut rather than super long extensions.

Just when I was thinking I was so over monograms I see this bracelet and am coveting it.  I love the over sized disc and that it looks antique and not super shiny.  I. Want. One.


I also love this Audrey Hepburn inspired up-do!  The bun is messy, voluminous and just plain perfect...next time I'm in a wedding I might go for this look...I think I've worn out the side bun.

Fall Denim Outfits

Sorry for the lack of posts...were you starting to think I might have died alone in my condo and no one had found me yet?  Nope...I was in training last week and am just now starting to get caught up on blogging...lots more to come!

Refinery 29 featured several fall denim outfits last week...here are my favs!


1. A denim skirt with a black mini....I especially love how the shirt is tied rather than laying untucked but the outfit would probably also work with the shirt tucked in rather than tied.  I don't know how I feel about high heeled loafer yet and an not sold on the red bag but you get the general idea of the look I'm going for!


I love this one because it is super classic...I already have a pair of dark high waisted jeans, ray ban aviators and tan boots in my closet and I could always use another ivory blouse!

The Perfect (Enough) Basket

I really had pretty much given up hope I'd find the perfect basket...but every time I find myself sitting in my living room I just keep thinking...those silk flowers have got to go!  I came across this one yesterday on Terrain (Anthropologie's home decor sister store) and I think it will do. The only problem?  I've discovered that succulents need direct light and since my living room is off my sun room this isn't going to happen on my coffee table...so now I have to decide  on another form of house plant...but we're making progress!

Bootie Bootie Bootie Rockin Everywhere?

Ok, so I kind of want a pair of black booties this winter.  Why?  Well for beginners, I learned pretty quickly a few years back that you can't just throw on tights with any old pair of shoes.  Case and point: First day wearing tights to work in years...wore them with pointy toed pumps (don't judge me it was 4 years ago and I was still developing my style) and walked out of my shoes at work all day because the tights made my pump so slippery.

I thought I wised up by getting a pair of rounded toe t-strap shoes which did solve the problem of walking out of my shoes...but they hurt like crazy if I wore them for more than an hour or two.

Thus the need for booties.  Here's the problem...as you might have guessed based on my search for the perfect coffee table basket I might be a little too picky for my own good.  Ok I admit it, I totally am...I once refused to buy a pair of New Balance running shoes because the N on the them was too big...true story.  Any ways...I have the perfect bootie in mind, I just can't seem to find it for a reasonable price and since booties are a trend and not a classic I don't want to spend a ton of mullah on them.


 I spotted the perfect booties on the girl from the Could I Have That blog.  I like booties that have a v in the front and don't just look like a chopped off pair of boots. 


They are made by a company called Ash and retail for $225.


These are Michael Kors and are $167...but of course I don't love them nearly as much.

Will y'all keep an eye out for the perfect black bootie and let me know if you find it?

The Search for the Perfect Basket Does NOT Continue.



I've resigned myself to the fact that my ideal coffee table basket may not be out there right now.  That one from William Sonoma was WAY too big.

Maybe I'll just line a few little potted plants up on my coffee table...anything has got to beat fake silk flowers right?

Anthropologie Items of the Week

Last night I painted my toes dark red...its totally fall in my mind...I am so over summer!


Gold is going to be so hot this fall and I think this cardi will be a very versatile layering piece!
